Les 7 Crus: Using the grapes from 7 villages of Côte des Blancs this multi-vintage is made from 1/3 of 2000 harvest and 2/3 from 2001. It rested in oak and underwent malolactic fermentation. In May 2002 it was bottled, after which it rested on lees for 3 years after which remuage was carried out by hand. (100% Chardonnay)
Terroirs Grand Cru: Using the grapes from 4 Grand Cru villages and made from 1/3 of 1999 harvest and 2/3 from 2000 harvest. It was malolactically fermentated in oak. Bottled in May 2001 to undergo second fermentation. Rested on lees for 4 years after which remuage was carried out by hand. (100% Chardonnay)
Venus:
Les Demoiselles Rosé: A pale pink salmon, with a red fruit nose of strawberries, blackcurrant. Flavours of compote and apple. A rose Champagne with a fine structure and great lightness. (93% Chardonnay, 7% Pinot Noir)
Minéral Grand Cru 1998: Made from Grand Cru grapes of the Côte des Blancs. The nose is well typified by the year, it evokes elegant flavours of dried straw, lime, butter as well as notes of dry fruits and fresh candied fruits. It freshness and the dry fruit is prolonged in the finish. (100% Chardonnay)
Cuvée l'Avizoise Millésime 1999: Made using grapes from the old vines (55 years of age) of Avize and partial malolactic fermentation. Flavours of butter, brioche and gingerbread match the nuances of honey, caramel and milk. The mouth develops to encompass fresh and fruity citrus fruits. (100% Chardonnay)
